Hive Mentality

When Zeke Freeman—a gastronomist who trained under famed chef Alain Ducasse and helped curate the gourmet offerings at Dean & Deluca—got into the honey business, he wasn't looking to produce a garden-variety sweetener. Instead, his approach resembles that of a boutique winemaker: he sources only single-varietal honeys from family-owned apiaries, focusing on unique notes that translate into perfect food pairings. The raw honey is bottled and sold just as it comes from the hive, without any pasteurization, filtering, or added flavoring.

This set samples two of Freeman's best varietals from the American Northeast: a delicate New York Basswood Honey whose warm herbal flavor begs to be drizzled over fromage blanc, and a floral Maine Wild Raspberry Honey, which has a fruity finish and is exactly what's been missing from your chamomile tea.

Growing up on his family's farm in Northwestern Pennsylvania, Zeke Freeman gained an appreciation for homegrown fruits and vegetables and the rich heritage of artisanal food production.

In 1989, Zeke enrolled in the University of Montana's School of Food Management & Culinary Arts. He worked at Louis XV under the direction of Alain Ducasse, a highly acclaimed chef known for his unique interpretation of Mediterranean cuisine.

After two years, Zeke moved back to the States. In his pursuit of fine foods for the upscale retailer, Freeman fell in love with the culinary power of real, raw honey and soon founded his company to bring single varietal honey to the American table.

Freeman is committed to supporting artisanal beekeepers and farmers by ensuring that they receive a premium price for a premium product.

Raw honey will crystallize over time - this is a natural process for honey. To soften, place jar in hot water and stir.
